Anyone for Ginger Beer?

Ginger Beer

8 sultanas
juice of 2 lemons
1 teaspoon of lemon pulp
4 teaspoons sugar
2 teaspoons ground ginger
2 cups of water.

Method:

Place sultanas, lemon juice, pulp, sugar, ground ginger and water into a screwtop jar and leave for 2-3 days until the mixture begins to ferment.
Each day for a week, feed the plant 2 teaspoons of ground ginger and 4 teaspoons of sugar.
At the end of the week the plant is ready to make into ginger beer.

4 cups of boiling water
4 cups of sugar
juice of 4 lemons
28 cups of cold water

Put the boiling water, sugar and lemon juice into a large bowl or bucket.
Strain the plant into the bowl using muslin and squeeze dry.
Add the third measure of water and bottle into airtight jars or bottles.
Leave for about a week or two before you start drinking and then you will have fizzy ginger beer.

To keep the plant alive, divide the mixture that is left in the muslin, in half.
Place one half in a screwtop jar with 2 cups of water and you can give the other half to a friend.
Keep feeding the plant each day for a week by adding 2 teaspoons of sugar and 2 teaspoons of ginger and continue again.

Just want to say thank you so much for your kind birthday wishes, you sent for Marcel.
I appreciate your kindness and friendship.

Happy week to all!
Hugs
Carolyn

  4. Oh Carolyn,
You have given me a trip down memory lane. My hubby and I used to have gallons of this when we were first married. I am sure some of it was positively alcoholic! It's a fun thing to do. x

  10. Carolyn, this is similar to Finnish Sima. It doesn't use ginger and it does use yeast. Thanks for the recipe.

  24. Hey Carolyn! I have visited you and tried to comment a couple of time and couldn't get it to go thru! Happy belated birthday to Marcel-hope you had a good dinner out. The ginger beer sounds so good and very interesting. I am not familiar with sultanas. I have heard that Martha Stewart's family used to make and sell that. Hope all is well with you!

  25. Some of you have asked about sultanas ~ it is a small seedless raisin and hope that you can get them, where you are.
Also this is like a dry ginger ale and is a very refreshing drink for the summertime, especially served chilled. It is non alcoholic.

  27. Oh this brings back memories of a batch my dear Mum made one year. She put them all down in our cellar & all was well until one Saturday night all Hell broke loose! The entire batch exploded at once (too much sugar), what a mess. It's MOTH's favourite, but I've never been brave enough to make it.

  33. Oh Carolyn,
I'm so glad I stopped by this afternoon. I love ginger beer! My grandma used to make it for me, I am the only one in the family that cares for it. I haven't had it for years, but I am going to try to make it since you've shared the recipe with us. I can't wait! Maybe this weekend.

Carolyn, I want to take a moment and thank you for your very kind comment about Gigi, it means more than I can say, your kindness speaks to my soul and appreciate it greatly. Thank you, Carolyn.
