Anyone for Ginger Beer?









Ginger Beer

8 sultanas
juice of 2 lemons
1 teaspoon of lemon pulp
4 teaspoons sugar
2 teaspoons ground ginger
2 cups of water.

Method:

Place sultanas, lemon juice, pulp, sugar, ground ginger and water into a screwtop jar and leave for 2-3 days until the mixture begins to ferment.
Each day for a week, feed the plant 2 teaspoons of ground ginger and 4 teaspoons of sugar.
At the end of the week the plant is ready to make into ginger beer.

4 cups of boiling water
4 cups of sugar
juice of 4 lemons
28 cups of cold water

Put the boiling water, sugar and lemon juice into a large bowl or bucket.
Strain the plant into the bowl using muslin and squeeze dry.
Add the third measure of water and bottle into airtight jars or bottles.
Leave for about a week or two before you start drinking and then you will have fizzy ginger beer.

To keep the plant alive, divide the mixture that is left in the muslin, in half.
Place one half in a screwtop jar with 2 cups of water and you can give the other half to a friend.
Keep feeding the plant each day for a week by adding 2 teaspoons of sugar and 2 teaspoons of ginger and continue again.
