Victorian Tea Party

The Victorian Parlor, has invited us in Blogland, to to a tea-party honouring, her Majesty Queen Victoria, to celebrate her birthday which was the 24 th May.

I wished you could share a nice cup of tea and some butterfly cakes with me.
I really should have taken the photos earlier, as it was 4pm and getting a little dark, sorry.

The old teapot, belong to my Grandmother, so is extra special and the beautiful organza cloth was embroidered by my Father's sister, my Aunt Ruth.

Here is my recipe for ~

Butterfly cakes, should you want to bake some for your afternoon tea.

115g butter or margarine
1/2 cup caster sugar
1/2 teaspoon vanilla extract
2 large eggs lightly beaten
1 - 1/2 cups self raising flour
1/2 cup milk

3/4 cup cream
1 teaspoon icing sugar
2 1/2 tablespoons jam
Extra icing sugar for dusting.

1. Preheat oven to 180C. Line a 12 hole muffin pan with muffin cases.

2. Beat butter, sugar, and vanilla in an electric beater or with a wooden spoon, until light and creamy. Gradually beat in eggs, flour and milk.
Beat until thoroughly combined.

3 Divide mixture between cases. Bake for 18 minutes, test with a skewer. Allow cakes to cool completely before cutting and filling.

4 Hold a sharp pointed knife at a downward angle and cut around from the top of each cupcake.
Cut the round in half to create the wings.
Whip cream with icing sugar until thick. Top with a heaped teaspoon of whipped cream.

5 Position the wings in the cream. Place a small dollop of jam between the wings and dust with icing sugar.

Many thanks for all your kind notes you left, my knees and fingers are healing and today I got back to going for my daily walk again.
