Anzac Day



On April 25th, New Zealander's and Australians mark Anzac Day - the annivesary of the 1915 landing of the Allied Troops at Gallipoli.
Every year on this day, ceremonies are held to commemorate the Australian and New Zealanders who died in battle.
While our image of the orginial Anzac Day is that of infantry fighting among the cliffs, ravines and ridges of Gallipoli, there was a maritime aspect to that campaign and NZ'ers played a part at sea also.



Anzac Biscuits
The crunchy favourite biscuit we have grown up enjoying.

Ingredients

1 cup of flour
pinch salt
1 cup of sugar
1 cup of rolled oats
125gm butter
1 tblsp. golden syrup
2 tblsp water
1 tsp baking soda
1 tsp vanilla essence

Method

1 Sift the flour and salt together into a large bowl. Then stir in the sugar and
rolled oats.

2 Melt the butter, golden syrup and vanilla together. Dissolve the baking soda in boiling water and mix into the flour with the melted butter, stirring until all the ingredients are combined.

3 Roll tablespoons of the mixture into balls and place on a greased tray ( flatten lightly with a fork)

4 Bake at 180 for about 12 - 15 minutes until the biscuits have flattened out and have become a rich brown.
Transfer to a cake rack to cool. They will crispen as they cool and then store in an airtight container.

Makes 3 dozen.
